Italian Kitchen Pasta Dinner

This classic Italian dinner menu is the perfect meal to serve any day for a special family dinner. In this class, restaurant secrets will be revealed so that pulling off the sophisticated sauces and finishing techniques can easily be duplicated at home. Chef Barbara Sowatsky will teach you to make, roll and cut pasta dough into beautiful fresh pappardelle pasta. You will learn to pull together sophisticated pan reduction with ease, elegance and little cleanup.

If you love lemons, this hands-on class is for you! Chef Iole Aguero Limonciello will teach you how to use a squirt and the zest of lemon to brighten savory dishes and to give an unmistakable edge to desserts. You will learn the versatility and the simplicity of this showcased citrus.

Making your own pasta is quick and easy, and after this hands-on class with Chef Jen Tarantino Reyes, you’ll think nothing of mixing up a batch for a weeknight supper. Add essential recipes for sauces made with fresh herbs and seasonal produce and you’ll have a go-to recipe repertoire. You’ll start with just flour and eggs, creating your own pasta dough that you will turn into one stuffed pasta and one cut pasta to serve along with two unique sauces!

In this hands-on class, you will make:

  • Fresh Handmade Pasta Dough
  • Ravioli with Ricotta Herb Filling in Light Tomato Sauce
  • Tagliatelle Pasta with Wild Mushroom Sauce (a staff favorite; even if you don’t like mushrooms, it wows the crowd!)

The Italian Kitchen – Pasta

Learning how to make homemade pasta at home can seem daunting. However, in this hands-on class with Chef and Sommelier Bonnie McPike, she will show you how to take flour and egg yolks and transform it to forkfuls of tender fresh pasta in the matter of minutes. With Chef Bonnie’s expert guidance, you will learn to shape each pasta, fill your Raviolis perfectly and how to create two delicious sauces. Menu:

Butternut Squash, Sage and Walnut Ravioli with Parmesan

Tagliatelle with Italian Sausage and Fennel Ragu

Your pasta will be served with Salad and Italian Wine selected by Chef and Sommelier Bonnie!

The Italian American Dinner – Pasta Bolognese

There is something magical about the transformation of flour and egg yolks info forkfuls of tender, fresh pasta in the matter of minutes. In this hands-on class, Chef James Sherrill will take you step-by-step through floured hands to finished plate as you make your own pappardelle noodles and he shares some restaurant tricks to shorten the time it takes to create a rich and meaty lamb bolognese.  

You will make and enjoy:

Caesar Salad with Balsamic Caesar Dressing, Croutons and Parmesan

Fresh Pasta Dough to produce:

Hand-Cut Pappardelle with Lamb Bolognese, Arugula and Parmesan

The Fundamental Foundation 201 – 4 Week Series – Week 3 – Doughs

Week 3 – January 24th – Doughs

There are few things as comforting as baked goods fresh from the oven. This class will explore the methods and ratios used to create fluffy yeast breads, buttery biscuits and flaky pie crusts, and tender fresh pasta! In this class we’ll knead, roll and hand-cut pasta. You’ll bake and enjoy a fruit tart. The joy of baking will even follow you home as you’ll leave this class with yeasted bread dough to bake the next day -or freeze to bake later -you’ll learn some tips and tricks for make-ahead frozen dough!

You will create and enjoy a dinner of:

Hand-cut pasta with red sauce, italian sausage and pecorino,

Pan-seared broccolini

Fruit tarts

Food Blogger Cindy Swain will take you on a culinary journey to make two types of authentic Italian pasta dishes.

We’ll start by making an iconic stuffed pasta “ravioli con funghi e ricotta”, mushroom and ricotta ravioli served with a butter and sage sauce and topped with Parmigiano Reggiano cheese.

Next we’ll learn the secrets to “pasta fresca al salmone affumicato e panna”, homemade pasta in a warm smoked salmon cream sauce.

The Quick and Elegant Italian Dinner

You’ll start the evening with a Shaved Mushroom Crostini.

Then get your hands floured and make Handmade Fettuccine Pasta,

Saute a Chicken Breast and

Make an Elegant Picatta Pan Sauce.

Served with a Simple Butter Lettuce Salad with Lemon and Chives and

Finish with a Warm Chocolate Molten Cake with Berries and Ice Cream.
