The Mexican Kitchen – Brunch

If you’re a fan of nachos, then there is no reason not to love the traditional Mexican brunch dish, Chilaquiles! In this hands-on class, with Chef Gino Garcia, you will begin by making two fresh salsas. One from charred tomatoes and the other from fresh tomatillos. Next you will fry tortilla pieces and build your Chilaquiles topping your creation with sliced white onion, crumbled queso fresco, a fried egg and your freshly prepared salsas. No brunch is complete without several dishes to accompany the star. You’ll make black beans cooked with avocado leaves and spicy chili de arbol, and a puffed Amaranth granola to top your yogurt parfait.  You will enjoy your brunch with a warm mug of scratch made Café de Olla.
