The Japanese Kitchen – Bento Dinner

Bento (弁当), in general, is a meal of convenience served in a portable container. Typically Bento refers to a lunchbox that the Japanese take to school or work. However, it can also be a dinner served in a fancy bento box such as in Shokado style which is characterized by its compartmentalized design, allowing for the artful arrangement of various dishes in a visually appealing manner. In this hands-on class, Chef Kanako Koizumi will teach you her tips and techniques for preparing an ideal dinner bento while keeping the five basic colors of food in mind. You will learn how to prepare a delicious dashi broth, cook perfect rice, learn knife skills including Kazari Giri (飾り切り) and plating techniques. Your Bento Box will include:

  • Black Cod Saikyo Miso Yaki with Shishitos
  • Assorted Vegetable Nimono (okra, carrot, eggplant, shiitakes)
  • Chicken Nanbanzuke with Bell Peppers
  • Shira-ae Salad (seasonal vegetables with creamy tofu dressing)
  • Squash Tempura
  • Seasonal Berries
  • Rice with Sweet Corn
