Fundamental Foundations 101 – 4 Week Series

This series runs for 4 consecutive weeks on Monday, September 9th, 16th, 23rd and 30th.

Want to be a better cook but wondering where to start? Our Fundamental Foundations Cooking Series, of four class, is designed to teach you the needed skills for everyday home cooking. Equipped with all the techniques offered each week, your cooking confidence and inspiration in the kitchen will soar!

Each week will concentrate on a key fundamental technique with more skills and methods sprinkled throughout each class: Key techniques include: Knife Skills, Incredible Eggs, Sauce Making and Salt, Fat, Acid, Heat (SFAH). Each technique is important to understand and each week will build upon the prior week so by the end you will be able to create delicious meals anytime.  This hands-on, 4-Week, Cooking Series will be taught by Chef Hend Yahya, a culinary professional.

Week 1 – Knife Skills
Learning proper knife skills for chopping, mincing, dicing and slicing is one of the essentials of creating any meal. You’ll learn knife care and safety, proper grip and motion while you become comfortable with the most important tool in the kitchen.  You will gain speed and confidence while practicing numerous cuts on various ingredients.  The menu will include:

  • Negi Toro Roll
  • Vegetable Roll
  • Shrimp Tempura
  • Cucumber Sunomono Salad

Week 2 – Incredible Egg
A quick and easy staple in most diets, eggs are as delicious as they are versatile and affordable.  They are not only a cornerstone of breakfast, but great anytime! You will practice the egg basics of poaching, boiling, scrambling and frying. The menu will include:

  • Shakshuka with French Bread
  • Avocado Toast topped with Fried Egg
  • Herd and Goat Cheese Scramble

Week 3 – Basics of Sauce Making
What’s the difference between béchamel and veloute? How do I make a pan sauce without lumps? What is roux and how do I make it?  Knowing the basics of sauce making is like having a secret power.  Sauces can transform any dish to restaurant quality in minutes!  In this class you will not only learn the basics of sauce making but build on them for limitless variations! The menu will include:

  • Béchamel Baked Pasta
  • Meatballs in Savory Tomato Sauce
  • Panzanella Salad with Vinaigrette
  • Sabayon Fruit Cups

Week 4 – Salt, Fat, Acid, Heat (SFAH)
Understanding the application of these four things will make you a better cook. Adjusting seasonings, how to balance flavors and the effect these have on your palate will be examined and explained in detail this week.  Then we will put your understanding into practice as Chef Hend guides you in making:

  • Cucumber Gazpacho
  • Homemade Ricotta Cheese
  • Ndunderi Gnocchi with Grilled Chicken
  • Crêpes Suzette
